  • 13.03 oz. box Coconut Crème Pudding
  • 2 tablespoons coconut milk
  • 20 oz. can crushed pineapples, undrained
  • 1 ½ ounces rum
  • 1 1/2 cups shredded sweetened coconut
  • 8 ounces whipped topped, thawed
  • Fruit, cookies, etc. for dipping


  1. In a medium size bowl, add the coconut milk, rum and pudding. Using an electric mixer, beat for 1 minute until thoroughly combined.
  2. Mix in the pineapple until well blended. 
  3. Fold in the whipped topping about ¼ cup at a time until thoroughly mixed in.
  4. Fold in the shredded coconut.
  5. Place in fridge and chill for 2-3 hours before serving. Serve with fruit, cookies, etc. Enjoy!
