If you’re looking for a fun way to celebrate St Patrick’s Day this year, don’t miss these easy green mimosas! A splash of blue curacao turns a basic mimosa into an easy St Patrick’s Day cocktail.

I love these because they’re a great way to celebrate St Patricks’s Day if green beer or lots of shots just isn’t your thing. If you don’t want to indulge too much, just add more orange juice and less champagne.

What You’ll Need

Just 3 ingredients are needed to make this easy St. Patrick’s Day cocktail!

  • Orange juice – Personally I prefer using fresh squeezed OJ but use whatever you prefer.
  • Blue curacao – A splash of blue curacao creates the green color when mixed with the orange juice.
  • Sparkling wine – Any champagne or Prosecco of choice. Our recommendations below.
  • Champagne flutes – Stick with some classic glass champagne flutes or if you’re a klutz like we are or serving a big group, try these unbreakable champagne flutes.

What’s the Best Champagne for a Mimosa?

You can use true champagne or a sparkling wine like Cava or Prosecco to make your mimosas. Prosecco is probably the most commonly used.

If you opt for real champagne, avoid anything that says “doux”, avoid it as it will be way too sweet. “Dry’ and “extra dry” are both options that will give you a slightly sweet flavor while “brut” will offer the least amount of sweetness.

Since this St Patrick’s Day Mimosas only include a hint of blue curacao and aren’t overly sweet themselves, I’d opt for a “dry” or “extra dry” champagne or Prosecco.

How to Make St. Patrick’s Day Mimosas

  • Add the champagne. Fill the champagne glass a little under 3/4 with champagne or Prosecco.
  • Top with juice and blue curacao. Add the desired amount of orange juice and finish the drink with a splash of blue curacao.

Can I Make Big Batch Green Mimosas?

You can make a big batch of St Patrick’s Day mimosas by combining the ingredients in a pitcher instead of individual glasses. However, since champagne is meant to be enjoyed bubbly, you should still serve the mimosas immediately after preparing them.
