The Best Fall Sangria Recipe

If you’re looking for a drink that just tastes like fall, this Pumpkin Sangria is for you! Made with pumpkin puree and pumpkin pie spice, apples, apple cider, and, of course, white wine and spiced rum, it’s a cocktail guaranteed to warm you up – even when it’s served over ice!

One thing we love about sangria is that it’s always perfect for parties and this fall sangria recipe is no exception. This recipe makes an entire pitcher, which serves up to 10 glasses of sangria – though if you’re hosting a party, you can easily serve more guests with smaller portions. (Or, you know, just double the recipe!)

It takes a total of 15 minutes to prepare this recipe and you can make the pumpkin pie syrup in advance, which would cut that prep time down even more. Then just combine the ingredients, pour over ice, and enjoy!

What You’ll Need

This pumpkin sangria recipe is made with just a handful of ingredients, including pumpkin puree, wine, and liquor.

  • Pumpkin puree – Since we’re adding spices to the drink later, you’ll want to use pumpkin puree and not pumpkin pie filling here.
  • Sugar
  • Vanilla
  • Water
  • Pumpkin pie spice – Gives the fall sangria a lovely warm flavor.
  • Sparkling apple cider – Adds more fall flavor while balancing out the liquor and making the sangria go farther.
  • White wine – I used Pinot Grigio but any dry white wine will work.
  • Spiced rum – Captain Morgan is perfect here, but you can use any brand or even substitute a different liquor instead.
  • Apples – Sliced apples are the fruit used in this fall sangria.
  • Cinnamon sticks – Used as a garnish and to add more flavor to the cocktails.

What Alcohol Goes in Sangria?

Sangria is typically made with wine and at least one type of liquor. In the case of this pumpkin spice sangria, we’re using dry white wine and spiced rum. The combination means that even those who do not usually like wine will still love the sangria!

If desired, you can swap out the spiced rum for another liquor of choice. I’ve included some options in the Variations section below.

How to Make Pumpkin Sangria

This fall sangria comes together in just 10 minutes and serves 10, making it perfect for your next fall party or Halloween gathering.

  • Make the pumpkin syrup. Whisk together the water, pumpkin puree, sugar, and vanilla over medium heat. Simmer for 10 to 15 minutes, until the syrup begins to thicken. Remove from heat and set aside.
  • Combine the ingredients. In a pitcher, add the sparkling apple cider, white wine, and spiced rum. Stir in a cup of the pumpkin syrup and 2 to 3 sliced apples.
  • Serve. Pour the pumpkin sangria into individual glasses over ice and more apple slices. Enjoy!

Recipe Variations

There’s no one way to make this fall sangria. You can easily adjust it to your own preferences by switching up the liquor used or even the fruit added. Here are a few suggestions.

  • Add more fruit. A big fan of having more fruit in your sangria? Try adding some chopped up pears. They go well with pumpkin and apples.
  • Switch up the liquor. If spiced rum isn’t your thing, feel free to use Fireball (cinnamon whiskey), bourbon, pumpkin pie vodka, or whatever your preferred fall liquor is.
  • Skip the hard liquor. Prefer your sangria without hard liquor? Try adding some prosecco to go with the Pinot Grigio.
  • Lighten it up a bit. Want your pumpkin sangria to go further or just want it a little less boozy? Add some club soda. Like the sparkling apple cider, it will stretch the drink without adding more liquor and it helps to lighten up the flavors as well.

Should Sangria Be Made in Advance?

Yes and no. About 30 minutes to 1 hour in advance is the perfect time to make your pumpkin spice sangria. Since you’re adding sparkling apple cider, you don’t want to make it too far in advance or it will become a bit flat.

30 minutes to an hour, however, is just enough time for the flavors to really blend to create a drink guests won’t be able to put down!

What Can I Do With Leftover Pumpkin Syrup?

The first step of this recipe creates more pumpkin syrup than needed for the recipe. While you can discard it if you want, I highly recommend storing it in an airtight container or jar in the fridge. It’ll last for a week or two.

Add it to your other cocktails or coffee to add a pumpkin flare, or you can even drizzle it over ice cream, cakes, etc. Anything that could use some sweet pumpkin flavor!

Ingredients

  • ½ cup pumpkin puree
  • 1 cup sugar
  • ½ tsp. Vanilla
  • 1 ¼ cups water
  • 1 tsp. Pumpkin pie spice
  • 3 cups sparkling apple cider
  • 4 ½ cups white wine (we used Pinot Grigio)
  • 1 cup spiced rum
  • 23 red apples, sliced, plus more for garnish (we used gala apples)
  • Cinnamon sticks for garnish

Instructions

    1. In a medium saucepan, whisk together water, pumpkin puree, sugar, and vanilla.
    2. Heat on medium heat, until simmering.
    3. Reduce heat slightly and simmer for 10-15 minutes, until syrup begins to thicken. Remove from heat and set aside.
    4. To your pitcher, add 3 cups sparkling apple cider, 4 ½ cups white wine, and 1 cup spiced rum.
    5. Add 1 cup of the pumpkin syrup you made, plus 2-3 apples, sliced. You can discard the rest of the syrup, or put the rest into an airtight container and store in the refrigerator for coffee or other cocktails.
    6. To your cocktail glass, add ice and 3-4 apple slices, fill with sangria.
    7. Garnish with a cinnamon stick. Enjoy!
