With just 3 ingredients, these Peeps Mimosas are a quick, fun, and easy Easter cocktail. They’re perfect for Easter brunch and relaxing with the family. But, of course, you can make these pink lemonade mimosas all spring and summer long!

An Easy Easter Cocktail
When it comes to Easter cocktails, there are not nearly as many as there are for other holidays. And while you may not need to drink so much at Easter to get through dinner with your family, it can still be nice to enjoy a fun cocktail for a while!
Enter these Peeps mimosas. They are the perfect Easter mimosa because they’re made with just 3 ingredients (champagne, lemonade, and Peeps) and have the perfect balance of sweet and not TOO sweet. They’re super fun for sipping during Easter breakfast or brunch or even later in the afternoon.
And if you don’t celebrate Easter, that’s okay. These still make a fun spring mimosa to enjoy anytime!

What You’ll Need
- Champagne – See below for notes on the best champagne for a mimosa.
- Pink lemonade – You have a few options here. You can either buy bottled pink lemonade, or some powdered pink lemonade mix. For a sugar-free version, I like to use these sugar-free singles.
- Peeps – Of course, you can’t have a Peeps mimosa without a Peep! I bought this package of pink, yellow, and purple Peeps from Amazon.
- Straws – I used fun pastel paper straw to hold the Peeps.
- Champagne flutes – Stick with some classic glass champagne flutes or if you’re a klutz like we are or serving a big group, try these unbreakable champagne flutes.
What’s the Best Champagne for a Mimosa?
You can use true champagne or a sparkling wine like Cava or Prosecco to make your mimosas. If you opt for real champagne, avoid anything that says “doux”, avoid it as it will be way too sweet. “Dry’ and “extra dry” are both options that will give you a slightly sweet flavor while “brut” will offer the least amount of sweetness.
Prosecco is a sparkling wine from Italy and also a great option for mimosas. Again, just pay attention to the “dry” and “brut” label.

How to Make a Peeps Mimosa
- Fill the champagne flute. Fill the glass about 3/4 way with champagne (a slightly bit less if you want a sweeter drink or more if you want a drier drink.)
- Top with pink lemonade. Top the glass off with some pink lemonade.
- Garnish & enjoy. Poke the Peeps through the straw, place in the champagne flute, and enjoy.

Can I Make a Big Batch of Mimosas?
You can make a big batch of Easter mimosas by combining the ingredients in a pitcher instead of individual glasses. However, since champagne is meant to be enjoyed bubbly, you should still serve the mimosas immediately after preparing them.

Instructions
- Fill a champagne flute 3/4ths of the way full with champagne.
- Top off with pink lemonade.
- Take a straw and poke 1 yellow and 1 pink peep though for garnish.
- Place the peel straw into the champagne flute.
