I’m a fan of either a mimosa or a bellini at lunchtime, but there are some important differences between the two.

The classic Mimosa is made by mixing equal parts champagne and orange juice. It’s typically served in a champagne flute with an orange wheel garnish.

Traditionally, a Bellini is made using Prosecco and peach puree, and is often served in a wine glass.

My Bellini Drink recipe blends the two for a fancy drink that will be perfect for brunch, but requires very little effort.

Here’s what you need to make the easiest Peach Bellini Cocktail:

  • Champagne – A light, sweet champagne will work beautifully in this recipe, and so will Prosecco.
  • Peach Schnapps – Any sweet schnapps will work well.
  • Peach nectar – You can find peach nectar at the grocery store. You might also find it at your liquor store. Peach nectar isn’t the same as peach juice, so make sure you buy a bottle that says nectar on it.

  • Mint leaves – Find these in the produce section at your grocery store.

How to Make an Easy Peach Bellini

Follow these simple steps and you’ll be sipping on a Peach Bellini with peach schnapps in less than a minute!

  • Layer your drink. First, fill a champagne flute 1/3 of the way up with champagne. Then, fill the next 1/3 of the way up with peach schnapps. Finally, top off your flute with peach nectar.
  • Garnish. Garnish with peach slices & mint leaves, and enjoy.

  • Make sure that all your ingredients are very cold. Keep everything in the fridge until you’re ready to get started, even your glasses if you have room!
  • Open your champagne 10 to 15 minutes before you plan to pour the cocktails. Just keep the champagne refrigerated. This will reduce the foam but still leave plenty of carbonation.
  • Make sure to use chilled ingredients. Sometimes, the champagne gets too foamy when making these drinks. It’s less problematic when the drink is cold, so make sure your ingredients are well-refrigerated.

Can I Save My Drink for Later?

Peach Bellinis are definitely made for immediate consumption. If you store your drink, it will lose the fizz from the champagne carbonation, so I recommend you finish your drink the first time.

Can I Make a Big Batch of Peach Bellinis?

If you’re making several Peach Bellinis at once, combine measured amounts of the peach nectar and champagne in a glass wine carafe and gently stir. Fill the glasses in a few small pours to maintain the consistency of each cocktail.
