Easy Lemonade Mimosas

I love mimosas. It’s the most acceptable way to have a boozy start to your day and they’re just so simple to make. While you can’t go wrong with a classic OJ + sparkling wine mimosa, I love playing around with other variations, like these fun Peeps Mimosas and Pineapple Mimosas.

But I have to say these Lemonade Mimosas are my new favorite! They’re tart with just the right amount of sweetness. I added some vodka to turn them into a strong lemonade cocktail but you can omit it if you’re just looking for a light and bubbly way to start your morning.

These are perfect for spring, summer, and all occasions from a brunch with the girls to bridal showers and Mother’s Day.

What You’ll Need

  • Lemonade vodka – In a pinch, regular vodka will work too.
  • Sparkling wine – See notes below.
  • Lemonade – I used a small bottle of storebought lemonade but fresh lemonade or the kind you make at home from the powder will work too.
  • Lemon slices – For garnish.

What’s The Best Champagne For Mimosas?

You can use true champagne or a sparkling wine like Cava or Prosecco to make your mimosas. If you opt for real champagne, avoid anything that says “doux”, avoid it as it will be way too sweet. “Dry’ and “extra dry” are both options that will give you a slightly sweet flavor while “brut” will offer the least amount of sweetness.

Prosecco is a sparkling wine from Italy and also a great option for mimosas. Again, just pay attention to the “dry” and “brut” label.

How to Make Lemonade Mimosas

Here’s how to make these quick and easy spring mimosas.

  • Garnish the glass. Add the lemon slice to the champagne glass.
  • Add the lemonade & vodka. Add lemonade vodka and lemonade to the glass.
  • Finish with sparkling wine. Top off the glass with sparkling wine.

Recipe Tips & Variations

Here are a few tips and variations for making this easy lemonade cocktail.

  • Adjust the ratio of the ingredients. I use equal amounts of sparkling wine, lemonade, and vodka in this recipe. However, you can adjust the ratios based on how strong you want your drink. Add more lemonade for a less strong drink.
  • Make strawberry lemonade mimosas. Replace the regular lemonade with strawberry lemonade and garnish the drink with a fresh strawberry.
  • Make pink lemonade mimosas. Use pink lemonade in place of the regular lemonade if desired.
  • Omit the vodka. If desired, you can make these lemonade mimosas with just lemonade and sparkling wine. The vodka makes these a lot stronger but it is optional!

Can I Make A Pitcher of Mimosas?

While we’re all about pitcher cocktails, like our Fizzy Flamingo, mimosas are not ideal for preparing in advance or in a pitcher as you want to serve the champagne straight from the bottle. What you can do is add the lemon, lemonade, and vodka to a pitcher and refrigerate it in advance, then pour into glasses and top it with the sparkling wine.
